Salad
Winter salads are a great place for combining citrus and chicories (like radicchio, escarole, endive), and this salad dressing with our buttery biancolilla and honey brings together sweet and bitter flavors.
Author:Olio Taibi
1 TBS red wine vinegar
1 tsp orange blossom honey (see note)
1/4 cup fresh squeezed orange juice
1/2 tsp kosher salt
1/4 tsp freshly ground black pepper
In a small jar or pitcher, vigorously whisk together red wine vinegar and honey to dissolve honey.
Add orange juice, Olio Taibi Biancolilla Extra Virgin Olive Oil, salt and pepper. Whisk well to combine.
We love Sol Mielato orange blossom honey for this dressing, but if you cannot find it, select another orange blossom or delicate flavored honey.
The dressing keeps well for a week in the fridge, remove in advance of using to allow to come to room temperature, and whisk to reincorporate ingredients.
To make the salad as pictured ~
For each serving, combine 1/2 cup green leaf lettuce, 1/2 cup ribboned radicchio, and one orange with peel and pitch removed and sliced into 1/3" slices. Arrange on a platter and drizzle with about 2 TBS of the dressing.
